I have a love-hate relationship with oatmeal:  I HATE it but I want to LOVE it. It wasn’t until I discovered a baked oatmeal recipe that I finally made my peace with oatmeal and began eating it regularly. I have tried so many variations of this basic recipe, but have landed on the Blueberry version as my favorite.  This makes a delicious oatmeal that does NOT taste like youre eating something good for you.

You can change it up try cinnamon raisin, chocolate chip, or swap out blueberries for raspberries. Its so good, you can make this one day and eat it all week.

Baked Blueberry-Peach Oatmeal
1 cup rolled oats
1/2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1 cup milk (or almond milk if preferred)
1 egg, slightly beaten
1/8 cup honey
2 tbsp Peach Jam (Trader Joe’s Peach Bellini Jam is awesome here)
1 c fresh blueberries
Chopped walnuts, optional

1. Preheat oven to 350 degrees. Combine all the dry ingredients in a bowl and mix thoroughly
2. In separate bowl add Peach jam, honey and egg and whisk together until combined. Stir in milk
3. Spray a shallow baking dish with non-stick spray and add oat mixture, spread out evenly.
4. Add blueberries on top of oats and spread evenly.
5. Pour milk mixture evenly over the oats in dish. Top with walnuts if using
6. Bake at 350 for about 25-35 minutes until browned and set.
